Ingredients
  

  • 1 lb Boneless, skinless chicken breasts
  • 1 tbsp Olive oil
  • 1 medium Onion chopped
  • 2 cloves Garlic minced
  • 4 cups Chicken broth low sodium
  • 1 cup Heavy cream
  • 1 cup Shredded Swiss cheese
  • ½ cup Shredded Parmesan cheese
  • ¼ cup All-purpose flour
  • 1 tsp Dried thyme
  • ½ tsp Salt
  • ¼ tsp Black pepper

Instructions
 

  • Cut chicken into bite-sized pieces.
  • Heat olive oil in a large pot over medium heat. Add chicken and cook until browned.
  • Add onion and garlic to the pot and cook until softened.
  • Stir in flour and cook for 1 minute.
  • Gradually whisk in chicken broth and bring to a simmer.
  • Reduce heat and simmer for 15-20 minutes, or until chicken is cooked through.
  • Stir in heavy cream, Swiss cheese, and Parmesan cheese. Cook until cheese is melted and sauce is thickened.
  • Season with thyme, salt, and pepper.
  • Serve immediately.
