Instructions
Cut chicken into bite-sized pieces.
Heat olive oil in a large pot over medium heat. Add chicken and cook until browned.
Add onion and garlic to the pot and cook until softened.
Stir in flour and cook for 1 minute.
Gradually whisk in chicken broth and bring to a simmer.
Reduce heat and simmer for 15-20 minutes, or until chicken is cooked through.
Stir in heavy cream, Swiss cheese, and Parmesan cheese. Cook until cheese is melted and sauce is thickened.
Season with thyme, salt, and pepper.
Serve immediately.
