Winter Soup Recipes

Ingredients
  

  • 1 tbsp Olive Oil
  • 1 onion Yellow Onion Diced
  • 2 cloves Garlic Minced
  • 4 cups Vegetable Broth
  • 1 tsp Dried Thyme
  • 1/2 tsp Salt
  • 1/4 tsp Black Pepper
  • 2 cups Butternut Squash Cubed
  • 1 cup Sweet Potato Cubed
  • 1 cup Frozen Peas

Instructions
 

  • Heat olive oil in a large pot over medium heat. Add onion and cook until softened, about 5 minutes.
  • Add garlic and cook for 1 minute more.
  • Pour in vegetable broth, thyme, salt, and pepper. Bring to a boil.
  • Add butternut squash and sweet potato. Reduce heat and simmer for 20-25 minutes, or until vegetables are tender.
  • Stir in frozen peas and cook for 5 minutes more.
  • Blend the soup with an immersion blender or in a regular blender until smooth and creamy.
  • Serve hot.
