Instructions
Heat olive oil in a large pot over medium heat. Add onion and cook until softened, about 5 minutes.
Add garlic and cook for 1 minute more.
Pour in vegetable broth, thyme, salt, and pepper. Bring to a boil.
Add butternut squash and sweet potato. Reduce heat and simmer for 20-25 minutes, or until vegetables are tender.
Stir in frozen peas and cook for 5 minutes more.
Blend the soup with an immersion blender or in a regular blender until smooth and creamy.
Serve hot.
