Winter White Bean Soup Collection

Ingredients
  

  • 1 lb Dried Cannellini Beans Soaked overnight
  • 8 oz Smoked Sausage or Tasso Ham Diced
  • 1 large Yellow Onion Chopped
  • 2 stalks Celery Chopped
  • 4 cloves Garlic Minced
  • 8 cups Chicken or Vegetable Broth
  • 1 tsp Dried Thyme
  • 1/2 tsp Cayenne Pepper Optional
  • 1 lb Shrimp Peeled and deveined (for Shrimp and White Bean Soup)
  • 1 medium Winter Squash Peeled, seeded, and cubed (for White Bean Soup with Tasso)
  • 1 bunch Collard Greens Chopped (for Appalachian White Bean Soup)
  • 4 oz Ham Hock Smoked (for Ham Hock and White Bean Soup)
  • 1 tsp Smoked Paprika
  • Salt and Pepper To taste

Instructions
 

  • If using dried beans, soak overnight. Drain and rinse.
  • In a large pot or Dutch oven, sauté onion, celery, and garlic until softened.
  • Add smoked sausage or tasso ham and cook until browned.
  • Add beans, broth, thyme, cayenne pepper (if using), and bring to a boil. Reduce heat and simmer for 45-60 minutes, or until beans are tender.
  • For Shrimp and White Bean Soup: Add shrimp during the last 10 minutes of cooking.
  • For White Bean Soup with Tasso: Add cubed winter squash during the last 20 minutes of cooking.
  • Season with salt and pepper to taste.
  • Serve hot with crusty bread.
