Ingredients

  • 8 oz Wonton wrappers
  • 1 lb Ground pork or ground chicken
  • 2 tbsp Soy sauce
  • 1 tbsp Shaoxing wine or dry sherry
  • 1 tsp Sesame oil
  • 1/2 tsp Ground ginger
  • 1/4 tsp White pepper
  • 8 cups Chicken broth
  • 2 slices Ginger peeled
  • 2 stalks Scallions chopped
  • 1 tbsp Vegetable oil

Instructions

  • Prepare the wonton filling: In a bowl, combine ground pork, soy sauce, Shaoxing wine, sesame oil, ginger, and white pepper. Mix well.
  • Assemble the wontons: Place a small spoonful of filling in the center of each wonton wrapper. Wet the edges of the wrapper with water and fold in half to form a triangle. Press the edges firmly to seal.
  • Bring the chicken broth to a boil in a large pot. Add the ginger slices. Reduce heat and simmer for 15 minutes.
  • Gently add the wontons to the simmering broth. Cook for 5-7 minutes, or until the wontons float to the surface and are cooked through.
  • Heat the vegetable oil in a small pan. Add the chopped scallions and cook until fragrant, about 1 minute.
  • Ladle the wonton soup into bowls. Garnish with the fried scallions and serve immediately.
